Must Winebar founder, director and executive chef, Russell Blaikie, is a leader in the hospitality arena.
Born in Busselton, Mr Blaikie has worked in some of the world’s best kitchens including the Dorchester Hotel in London. He was a director and head chef of Perth’s No 44 King Street, and founded Must Winebar which opened from late 2001 to December 2020.
Mr Blaikie became the director of food at Prendiville Group in May 2021. It is a newly-created role at the WA hospitality family business, where he is tasked with delivering innovation in food and developing a range of new hospitality concepts. Mr Blaikie had consulted to the group for three years up until 2015.
In 2003, Mr Blaikie won a Business News 40under40 Award.
