Hidden away from the hustle and bustle of central Subiaco is the latest addition to the suburb’s culinary landscape, Chapter One Brasserie.
Located on the former site of French restaurant Jacques, next to The Sapphire Bar, Chapter One is the realisation of a six-year dream for Hayley Edwards and Jason Walker.
The couple, originally from the UK and boasting 30 years of hospitality experience between them, moved to Perth three years ago.
In Chapter One the pair has created what they believe is an “oasis in the heart of Perth”.
“We’ve been open six weeks and slowly the word is getting out,” said Mr Walker, who also is the brasserie’s chef.
“We are very happy with the location and wanted to get away from Rokeby Road.
“We just want to do our own thing.”
Chapter One is welcoming; so much so that it feels like someone’s home, with its wooden floorboards, black and white photographs and a quaint courtyard out the back.
And to match the feel, Mr Edwards has created a menu with a focus on “home comfort food” with lots of European influences.
Seared scallops, chicken liver parfait, salt and pepper baby squid, blue manna crab, angel hair pasta, and for dessert macerated cherry and hazelnut semi freddo and warm chocolate pudding with homemade pistachio ice cream, is a selection of what is on offer.
“It is a small menu but that means we can change it easily and more frequently,” Mr Edwards said.
“We try and change about two dishes every couple of weeks. And we change with the season and the produce available. This also keeps us interested in the kitchen but more so for our customers, who can try something different.
“And there are daily changes with the risotto and fish.”
The site, at 292 Hay Street, was not an easy find for the pair, who had also looked in West Perth and Claremont.
Further down the road, well-known Perth restaurateur Albasio La Pegna is preparing to open two new establishments next to Sapori Gastronomia Italiana (espresso bar and gourmet food to go), which he opened earlier this year (the old Emre Belle).
Mr La Pegna bought Emre Belle, the former Altos Bistro, and the bookshop between them.
Mr La Pegna also owns Funtastico on Rokeby Road and Zafferano at the Swan Brewery.
