What do you like most about your job?
We make almost everything fresh everyday because we have no cool room. That keeps me busy and stops me from getting bored.
What’s the biggest mistake you’ve made and what did you learn from it?
Cutting the end of my finger off when I was a first-year apprentice. It taught me that knife skills are important.
Favourite food?
Any well-made risotto. I love risottos if they are done properly.
Favourite Asian restaurant?
Han Palace, Bennett Street in East Perth.
If you had to take guests to a restaurant in Perth other than your own where would you go?
I always let my friends pick so it is not my fault if they don’t enjoy it.
Favourite interstate restaurant?
Marque, Sydney. It’s just awesome.
Favourite international restaurant?
I haven’t done much international travel so I don’t really have one.
Cookbook you couldn’t live without?
Les Halles by Anthony Bourdain.
What’s your pet hate in the kitchen/your business?
It would have to be things being dirty. I hate dirty kitchens, it has to be nice and clean.
What kitchen tool would you hate to be without?
A good knife.
What wine or wine style are you enjoying right now?
A New Zealand pinot blanc.
If you weren’t doing your current job what would you be doing?
I’d definitely be doing something that involves animals, like a vet.
