I get to create tasty food for a living and it doesn’t feel like a job, it’s a passion.

Pasta, or anything spicy.

The Grand Palace; good variety of food and good flavours.
If you had to take guests to a restaurant in Perth other than your own, where would you go? Why?
Jackson’s Restaurant, great food and excellent service.
Favourite interstate restaurant?
Neil Perry’s Rockpool (Sydney). Great chef, great cuisine.
Favourite international restaurant? Why?
I would love to try Suko in Los Angeles; an interesting Japanese restaurant.
What’s your pet hate in the kitchen/your business?
Un-seasoned food.
Cookbook you couldn’t live without?
Larousse Gastronomique.
What kitchen tool would you hate to be without?
My Chinese chopper.
Wine or wine style are you enjoying right now?
I’m a fan of dessert wines.

Either a musician or fireman.
